Ingredients

  • 1kg lean beef mince
  • 2 cans black beans or kidney beans
  • 3 cups cooked rice
  • 1 onion diced
  • 1 capsicum diced
  • 2 cloves garlic
  • 2 tbsp tomato paste
  • 1 cup passata or crushed tomatoes

Seasoning

  • 1 tsp paprika
  • 1 tsp cumin
  • chilli flakes to taste
  • salt & pepper

Method

  1. Cook onion, garlic, and capsicum
  2. Add mince and brown properly
  3. Add seasoning, tomato paste, and passata
  4. Stir through beans
  5. Add cooked rice
  6. Portion into meal prep containers
  7. Freeze
